In the quiet hours of early morning, the curd is hand-churned using the age-old Bilona method, alternately rotated clockwise and anticlockwise to separate fresh, raw white butter. This butter is then slowly simmered over gentle heat to transform into a rich, aromatic, golden gheeβpreserving its natural nutrients, flavour, and goodness.
